压榨后，wine in stainless steel tanks for clarification, followed by malolactic fermentation lasting around 21 days. The wine then aged in French and American oak barrels, with a careful balance between the two to bring out the best flavors of the grapes. To create the final blend, Tom tasted each individual barrel to determine the best batches. Secondary wines entered his dessert wine program.

Tom hopes his wines have certain characteristics: "Since I can't predict every year, I hope to produce mature and healthy fruit and let the grapes decide on flavor profiles." Bordeleau PETIT VERDOT LOT 3 aged for five years before release. Good color and tannin define this wine. Soft floral notes complement flavors of chocolate, blackberry, and black cherry; there is a hint of smoke and leather on palate; long aging brings firm but not harsh tannins.

The Atlantic Seaboard Wine Association's mission is to promote eastern wines. For this purpose," we can prepare to take these excellent examples of eastern winemaking nationwide through various events," said Grant Crandall from ASWA.

ASWA will host an awards ceremony at Congress after each competition under Congressional Wine Caucus leadership where pure silver Jefferson Cup Perpetual Trophy will be inscribed with name of winning winery awarded Best Performance Award winner.
